Easy Homemade Tortillas

It’s Cinco De Mayo and we have an easy dinner idea for you. My kids loved it and I don’t think I will buy tortillas from the store ever again!

Tortillas are easy to make, so I really wouldn’t call it a recipe. You don’t need fancy tools and they only have 5 ingredients, so you know whats in them.

This recipe makes about 14 tortillas.

You will need:

2 3/4 cup of flour

1 teasp baking soda

1/2 teasp salt

1/3 cup vegetable oil

3/4 cup warm water

Mix the dry ingredients together and then add the oil and water and mix until it forms a ball. You can divide your dough into small 1 1/2 inch balls or you can just pinch off pieces as you go.

Warm a skillet to a medium heat.

Roll your dough ball out on a lightly floured surface until its flattened. You don’t want to stack your uncooked tortillas or they will stick together, so I roll as I go. Cook your tortillas until they start to bubble a little and then flip. They don’t take long to cook and will brown slightly.

Thats it. So easy.

Top with your favorites, we like to use  Zaycon Fresh chicken with Spiceologist Chile Margarita rub, and a little pico de gallo with avocado. Its a quick meal with lots of flavor. homemade tortillas and fried cornMy kids love it with a little bit of ranch drizzled on top.

For this classic dish, we are going to need a considerable amount of pent-up frustration to pound out Zaycon chicken breasts, so it’s perfect for a weeknight dinner! Rough day at work? Perfect. Did the kids paint the dog? Even better! Partner has anger management issues? THE BEST – have him do it!


DSC_5691DSC_5677We start with our old friend, the giant double boneless skinless breast that we are oh, so familiar with. Do a trim up, remove the rib meat lobe & any extra fat that might be there. Admire your work.

Next, you’ll want to butterfly the thick part of the breast to approximate the thickness of the thinner area. This might take two cuts.

Between two layers of plastic wrap, place the chicken sprinkling a bit of water between the chicken and the plastic wrap. This will help the chicken move and slide a bit during the gentle slams.

Grab your whacker implement and have fun. You’re going to try and get these to be as thin as possible – like 1/8” to ¼” in thickness. The thinner they are the better your result will be.

Brush the chicken with Dijon mustard, then place sliced ham and then cheese of your choice. Traditional cheese to use here is Swiss, I like gruyere too. If you want a really nice, long, stringy melty one, provolone would be great. Roll them up, tucking in the sides as you go to form a chicken burrito-looking roulade.

Put this in the fridge for 30-60 minutes or more. This will firm up the chicken making it super easy to pan fry. Dip your chicken roll, first, into flour, then into an egg bath and then in bread crumbs. I used just regular bread crumbs here, but you can use panko if you like.

In a large skillet, add a tablespoon or so of olive oil and equal amount of butter. Pan fry each side for a couple of minutes, then into a 350 pre-heated oven for 20 minutes or so, when they are done, they will want to sit and rest for 4 minutes or so.

Greek Freak Zaycon Ground Beef Empanadas

A couple of weeks ago I had the pleasure of traveling over to Spokane, Washington to visit the Zaycon Foods offices and meet the Zaycon team! The weather was beautiful, and I was even sitting on the mountain side of the plane and had such a beautiful view. There’s really nothing like snow covered mountains.

It was such an awesome trip, and I had such a great time. I knew I loved Zaycon Food’s product before this trip. After, I’m fully on board with the whole team and the business. Everyone was really warm, welcoming, and friendly! Thanks to the entire team for an awesome couple of days. I can’t wait to come back!

While I was there we got together in the Zaycon kitchens to prepare a little meal for the crew, and share this awesome recipe for Easy Greek Freak Zaycon Ground Beef Empanadas.

There was much debate over just what to call these little pockets of fusion. Zaycon Ground Beef is seasoned and combined with onion, garlic, some awesome Spiceologist Greek Freak seasoning, olives, and feta cheese.

Then we stuffed it into puff pastry pockets, baked it, and served it up with some homemade tzatziki whipped up by the talented CSO (Chief Snack Officer) Matt!

The hardest part about these was stuffing the pockets, and that was actually simple. Just stuff them, crimp the edges, bake on parchment paper, and you are DONE.

Greek Freak Zaycon Empanadas

If you are like me and like to pre-brown a bunch of your Zaycon Foods Ground Beef when you pick it up before you freeze it, these will be even faster. I LOVE freezing some pre-portioned pre-browned ground beef to pull out of the freezer and add to spaghetti sauce, mix up into sloppy joes, make a quick beefy noodles, or tacos on busy nights. It also works really well to toss into crock pot soups and stews. You can even add in some onions and garlic while you are browning it so you don’t need to saute those while you are whipping up your quick and easy dinners.

These greek freak zaycon ground beef empanadas would also be fantastic stuffed, and then frozen so you can toss them right into the oven.

Greek Freak Zaycon Ground Beef Empanadas

Serves: 3-4
Ingredients
  • 1 pound Zaycon ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Spiceologist Greek Freak Seasoning Rub
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup crumbled feta cheese
  • 1 cup of chopped olives – we used a mix of black olives and kalamata
  • 1 package of frozen puff pastry – thawed according to package directions
  • 1 egg beaten with 1 tablespoon water
Instructions
  1. Preheat oven to 375.
  2. Place ground beef, onion, garlic, and seasonings in a large frying pan and brown well. After the meat is browned, remove from pan and mix in the olives and feta.
  3. Unfold your puff pastry sheet on a lightly floured surface, and roll out slightly to enlarge. Cut 3-4″ circles out of the sheet, and place a few heaping tablespoons on one side. Brush one half lightly with the egg wash, and fold over and pinch shut. Repeat with the remaining filling and pastry circles. Crimp edges completely shut with a fork. Brush lightly with egg wash.
  4. Bake at 375 for about 15-20 minutes, or until golden brown and puffed.
